Zest is the delicious, flavor-packed outer layer of any citrus fruit.  It can instantly spruce up a dish and adds a zingy high note when done right.  But beware the white pith underneath–it’s bitter and is never a welcome guest at a dinner party.  So what’s the best way to zest?  There are many ways to skin a lemon–Chef Danny Herrera of Otto Las Vegas shows you three of his favorites.
