Mascarpone is the Italian answer to crème fraiche: thick, rich and luscious, mascarpone is often used in desserts such as tiramisù and cannoli, but can also be used to great effect in savory recipes.  From ravioli fillings to crostini to creamy soups, mascarpone is a versatile decadence.  Though it’s often pricey in supermarkets, it’s dead easy to make at home and your homemade version will taste better to boot!  Katia Delogu, pastry chef at Eataly, shows you how it’s done.
