Makes 6 drinks
1 medium seedless watermelon
1 bottle dry white wine
Juice of 3 limes
Cut the rind off the watermelon and cube it. Reserve a few pieces of the rind for garnish, and compost or pickle the rest.
Purée the cubed watermelon, then allow it to settle or strain through a fine-mesh sieve.
For each serving, fill a large glass with ice and add about 4 ounces white wine. Top off each glass with watermelon juice and the juice of half a lime.
Stir, garnish with a piece of watermelon rind. Serve at once.
