Makes 1 drink
1 ½ ounces Mount Gay Rum (black label)
1 ½ ounces spiced apple shrub (recipe below)
1 ounces pineapple juice
½ ounces Luxardo Maraschino syrup
For the Spiced Apple Shrub:
2 parts ginger-infused simple syrup
1 part champagne vinegar
1 part apple cider vinegar
1 part spiced apple puree (spices like cinnamon, nutmeg and cloves are great here)
Mix all ingredients together and store in the refrigerator for up to 2 weeks.
Add all the ingredients to a shaker. Add ice and shake well.
Strain and serve over ice in a rocks glass. Garnish with a cinnamon stick.
