To add a smoky flavor to a cocktail, I cook fruit on a grill or in a cast-iron skillet. My take on a lemon drop is much more grown up than the sugary-sweet original. So get to charring and sip to citric peace!
Makes 1 cocktail
2 teaspoons sugar
3 ounces vodka
1 lemon, for twists
Slice the grapefruit in half and sprinkle with sugar. Place the sugared halves cut-side down on a hot cast iron pan and cook until sugar has caramelized and the surface of the grapefruit is darkly charred. Remove from heat and allow grapefruit to cool.
Squeeze juice from grapefruit halves into a mixing glass with ice. Add vodka and stir vigorously until ice cold.
Using a peeler, make a twist from the lemon. Strain the grapefruit drop into a rocks glass, garnish with the twist, and serve immediately.
