Mini Grilled Cheese with Otto Truffle Honey


Makes 32 triangles


3 tablespoons extra virgin olive oil

1 tablespoon dijon mustard

1 tablespoons grated horseradish drained

8 slices pan de mei (or any sliced bread), cut into 1/4-inch thick pieces

1/4 pound of Gruyere or fontina cheese, sliced

1 tablespoons butter, melted

Salt and pepper, to taste

Otto Truffle Honey


in a small bowl, combine stir the olive oil, mustard and horseradish and season with salt and pepper. 


Lay out 8 slices of bread on a board and smear the mustard mixture.


On 4 of the slices of bread, add 3 slices of cheese then a pinch of salt & pepper, close with the corresponding sliced bread. Brush the top of the bread lightly with melted butter and place in a non-stick sauté pan over low heat.


While the buttered side is slowly browning, brush the top portion of the bread with butter. Once the underside is golden brown, carefully flip to brown the other side. Remove from the pan and cut into 8 uniform triangles.


Place on a serving tray and drizzle with the honey.


Serve immediately.
