Mussels
At my restaurant Babbo, we purchase Marine Blue mussels (Mytilus edulis) from Prince Edward Island. Harvested year round from the cool, clean waters off of Canada, these plump mussels are always guaranteed fresh and delicious. When cooking with mussels, it is important to remember to remove the beards, the proteinous fibers that form a furry little strip along the edge of each one. Simply cover your hands with a kitchen towel and yank the beard out and toward the hinge of the mussel. There you have it, a de-bearded mussel. Mussels use their beards to form families, attaching themselves to each other, and to rocks, boats, docks, etc,. Please remember, discard any mussels that do not open during the cooking process. They are not fit to eat.
